For the Sauce
  • 3 tablespoons Extra Virgin Olive Oil Use good quality for best flavor.
  • 1 medium Red Onion Optional for a simplified sauce experience.
  • 2-3 cloves Garlic Minced for bold flavor.
  • 1 medium Red Chilli Pepper Adjust according to spice preference.
  • 28 ounces Peeled Tomatoes Hand-crush for chunky texture.
  • 1/4 cup Fresh Parsley Can be swapped with basil or omitted.
For Garnish
  • 2 tablespoons Extra Parsley For presentation.

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a rolling boil. Add spaghetti and cook according to package instructions, about 8-10 minutes.
  2. In a large pan, heat olive oil over medium heat. Add finely diced onion and sauté for 3-4 minutes until soft.
  3. Add minced garlic and chopped chili pepper, stir and cook for 1 minute.
  4. Stir in peeled tomatoes and simmer for 10-15 minutes until thickened.
  5. Add drained spaghetti to the sauce, toss to coat. Add reserved pasta water if needed.
  6. Serve in bowls topped with chopped parsley.
