Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together pure maple syrup, soy sauce, sriracha, minced garlic, and chili flakes until combined.
  3. Season chicken breasts with salt and pepper, then sear in olive oil over medium-high heat for 2-3 minutes per side.
  4. Transfer the seared chicken to a baking dish and pour the marinade over it, ensuring each piece is well coated.
  5. Bake the chicken in the preheated oven for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
  6. In a saucepan, combine jasmine rice, coconut milk, chicken broth, and a pinch of salt. Bring to a boil, stirring occasionally.
  7. Reduce heat to low, cover, and let the rice simmer for 18-20 minutes, or until the liquid is absorbed.
  8. Let the baked chicken rest for a few minutes, then spoon the sauce over it before serving.
  9. Fluff the coconut rice with a fork and serve alongside the chicken, garnished with fresh cilantro and lime wedges.
