- Slice halloumi cheese into even ½-inch thick slices. Heat a non-stick skillet over medium heat and add a splash of olive oil. Fry the halloumi for 2-3 minutes on each side until golden brown and crispy. Remove from the skillet and set aside.
- Wash and prepare fresh vegetables: slice the red bell pepper and red onion, then julienne the cucumber. Tear the lettuce into bite-sized pieces.
- Take a tortilla wrap and spread a generous layer of sweet chili sauce. Layer the crispy halloumi, sliced bell pepper, cucumber, red onion, and lettuce. Add optional toppings like avocado or herbs.
- Fold the bottom edge over the filling, then roll tightly from the bottom up. Optionally, return to the skillet to toast for 1-2 minutes.
