Step-by-Step Instructions
  1. Prep the Slow Cooker: Grease the inside of the slow cooker with cooking spray or butter.
  2. Add Chicken and Vegetables: Place chicken at the bottom of the slow cooker and layer with red bell pepper and onion.
  3. Make the Sauce: Whisk together pineapple juice, low-sodium soy sauce, brown sugar, ketchup, garlic powder, ground ginger, rice wine vinegar, and black pepper. Pour over chicken and veggies, then fold in pineapple chunks.
  4. Cook: Cover and set cooker to LOW for 4-6 hours or HIGH for 2.5-4 hours.
  5. Thicken the Sauce: Mix cornstarch with cold water to create a slurry and stir into the crockpot. Add butter if desired. Cook until the sauce thickens.
  6. Serve: Remove lid and stir chicken and sauce. Spoon over rice, garnishing with green onions or sesame seeds if desired.
