For the Dressing

  • 1 cup Mascarpone Best at room temperature
  • 1/2 cup Yogurt Greek yogurt recommended

Preparation Steps
  1. Hull and quarter the strawberries. Core and dice the apple. Halve the grapes lengthwise. Rinse the blueberries and raspberries gently.
  2. Combine the strawberries, blueberries, raspberries, diced apples, halved grapes, and drained mandarin oranges in a large mixing bowl.
  3. Drizzle fresh lemon juice over the fruit, toss delicately with a spatula.
  4. In a medium bowl, blend mascarpone, yogurt, honey, vanilla, and salt until smooth.
  5. Gently fold the dressing into the fruit salad.
  6. Serve immediately or refrigerate for up to two hours before serving.
