  • 2 tablespoons balsamic vinegar can replace with red wine vinegar

Preparation Steps
  1. Preheat the oven to 400°F (200°C).
  2. Toss chopped cauliflower, carrots, bell pepper, and red onion with olive oil, salt, and pepper on a baking sheet.
  3. Spread vegetables in a single layer and roast for approximately 25 minutes, stirring halfway through.
  4. Melt butter or heat olive oil in a pan, add minced garlic and crushed red pepper flakes, and sauté for 1 minute.
  5. Add sun-dried tomatoes, heavy cream, and vegetable broth, and simmer for about 3 minutes.
  6. Stir in Parmesan cheese and Italian herb blend until smooth.
  7. Combine roasted vegetables with creamy sauce and simmer for an additional 2 minutes.
  8. Stir in fresh basil just before serving.
