Step-by-Step Instructions
  1. Prepare the pie crust by combining flour and cold butter until crumbly, adding ice water until just combined. Chill for at least 1 hour.
  2. Peel and cut the fresh yellow peaches into 1-inch cubes.
  3. Toss peaches with lemon juice, sugar, tapioca starch, vanilla extract, and smoked paprika.
  4. Preheat oven to 400°F (200°C). Roll out one portion of chilled pie crust.
  5. Place rolled-out crust in pie dish, pour peach mixture into crust, and dot with unsalted butter cubes.
  6. Roll out second pie crust for a lattice topping, seal edges by crimping.
