For the Filling
  • 2 cups Fresh Spinach Leaves Kale or arugula can be substituted.
  • 1 medium Carrot (Grated) Zucchini or bell peppers can be alternatives.
  • 1 cup Cucumber (Thinly Sliced) Shredded lettuce or bell pepper strips can substitute.
  • 1 medium Red Bell Pepper (Thinly Sliced into Strips) Yellow pepper may also be used.
  • 1 medium Avocado (Sliced) Guacamole can be used instead.
  • 1 cup Cherry Tomatoes (Halved) Diced regular tomatoes can be swapped.
Seasoning
  • 1 tablespoon Lemon Juice Lime juice can be a substitute.
  • to taste Salt & Black Pepper Adjust to fit personal taste.
Optional Additions
  • to taste Sriracha or Chili Flakes For a spicy kick.
  • 1 cup Chickpeas/Black Beans/Baked Tofu Boost protein content.
  • 1 cup Grilled Veggies For smoky flavor.

Method
 

Step-by-Step Instructions for Vegan Veggie Wraps
  1. Begin by washing and drying all your fresh produce thoroughly. Grate the medium carrot and thinly slice the cucumber, red bell pepper, and cherry tomatoes. Place the spinach leaves in a bowl, and drizzle them with lemon juice, salt, and black pepper, tossing until they are evenly coated.
  2. Lay a whole wheat tortilla flat on a clean surface or a large plate. Spread a generous layer of hummus over the entire surface of the tortilla, leaving about half an inch from the edges.
  3. In the center of the hummus-coated tortilla, layer the seasoned spinach evenly. Follow this with the grated carrot, thinly sliced cucumber, bell pepper strips, avocado slices, and halved cherry tomatoes.
  4. Start by folding in the sides of the tortilla gently, tucking in the filling as you go. Begin rolling the tortilla tightly from one end to the other.
