Step-by-Step Instructions
  1. Begin by heating 2 tablespoons of sunflower oil in a large pan over medium heat. Once the oil is shimmering, add the rinsed basmati rice and sauté for 2-3 minutes.
  2. Stir in the chopped garlic, red chilli flakes, and lime zest, letting them mingle with the sautéed rice for about 1 minute.
  3. Increase the heat until the mixture comes to a gentle simmer. Cover the pan and reduce the heat to low. Let the rice cook undisturbed for 15 minutes.
  4. After 15 minutes, remove the pan from heat while keeping the lid on. Let the rice rest for an additional 10 minutes.
  5. Once rested, fluff the rice using a fork and drizzle in the juice of 1 small lime and fold in the chopped cilantro.
  6. For an extra touch, top with finely chopped spring onions if desired. Serve warm.
