- Begin by heating 2 tablespoons of sunflower oil in a large pan over medium heat. Once the oil is shimmering, add the rinsed basmati rice and sauté for 2-3 minutes.
- Stir in the chopped garlic, red chilli flakes, and lime zest, letting them mingle with the sautéed rice for about 1 minute.
- Increase the heat until the mixture comes to a gentle simmer. Cover the pan and reduce the heat to low. Let the rice cook undisturbed for 15 minutes.
- After 15 minutes, remove the pan from heat while keeping the lid on. Let the rice rest for an additional 10 minutes.
- Once rested, fluff the rice using a fork and drizzle in the juice of 1 small lime and fold in the chopped cilantro.
- For an extra touch, top with finely chopped spring onions if desired. Serve warm.
